Broccoli with Zesty Orange Sauce

Ingredients

  • Broccoli:  3-1/2  cups
  • Red or yellow bell pepper: 1 medium, cut into 1-inch pieces 
  • Butter: 1 tablespoon
  • Finely chopped onion: 2 tablespoons
  • Garlic: 1 clove minced 
  • Corn starch: 1-1/2 teaspoons  
  • Orange juice: 2/3 cup
  • Dijon-style mustard: 2 teaspoons

Directions:

  • In a medium saucepan cook broccoli and sweet pepper in a small amount of boiling, lightly salted water for about 8 minutes or until broccoli is crisp-tender; drain. Cover and keep warm.
  • Meanwhile, melt butter in a small saucepan over medium heat for the sauce. Add onion and garlic; cook until onion is tender. Stir in cornstarch. Add orange juice and mustard. Cook and stir until the mixture is thickened and bubbly. Cook and stir for 2 minutes more.
  • Pour the sauce over the broccoli mixture; toss gently to coat.
