Spanish Omelet

Ingredients
1- 3 Medium Sized Potatoes 
2- 4 Eggs
3- 1 medium Onion (chopped)
4- 1 Capsicum (chopped)
5- 1/4 Cup Olive oil
6-  Salt---to taste
7- White pepper---as required
8- 3 Tbsp chopped parsley
How To Cook:
1- Peel potatoes and onions cut them into small cubes.  
2- Heat the oil in a non-stick pan add the potatoes and onion and stew gently, partially covered, for 30 minutes until the potatoes are softened.Strain extra oil.

3- Beat the eggs and add parsley and salt and pepper. 
4- Pour the well beaten eggs on cooked potatoes pan and cook on a middle heat, using a spatula to shape the omelet into a cushion.
5- When almost set, invert on a plate and slide back into the pan and cook a few more minutes. And serve in a plate.
